Over a year in the making, our newest marmalade celebrates the unexpected!
For years we've wanted to create a third marmalade to complete our collection. We knew it had to be more than just a citrus preserve- it had to showcase another incredible foraged ingredient. Bert spent a lot of time dabbling with different flavour combinations, dandelion root, damson, but in the end...
That ingredient turned out to be Douglas fir!
Despite being part of the pine family, Douglas fir has wonderfully fresh citrus aromas and has long been used in teas, syrups and spirits. We first tried out Douglas fir back in the spring of 2025- after finding a tree near one of our main dandelion picking spots. Curious about its bright, zesty flavour, we took some fresh tips home and started experimenting.
After months of recipe development, we created a homemade Douglas fir syrup that pairs perfectly with grapefruit. Swapping the traditional Seville oranges for organic grapefruit creates a marmalade that's bold, intensely citrusy and satisfyingly bitter, while our thin-cut peel gives it a beautifully smooth texture.
The result is a marmalade made for those who appreciate the true character of traditional preserves, while embracing something a little different.
